Anna's Spinach Feta Chicken Thighs

1 pound chicken thighs (4 thighs)1 cup frozen spinach (thawed)1 cup feta cheese (crumbled)4 tbsp olive oil1 tsp oregano 1 tbsp parsley1 tsp garlicdash of pepper
Makes 4 servings
Heat oven to 350F
Combine spinach, feta, oregano, and parsely in a bowl. Combine salt, pepper, garlic and olive oil in a second bowl. Rinse thighs. Lift skin and stuff 1/4 of the bowl's contents between skin and meat. Rub, pepper, garlic and olive oil into the skins. Place in a shallow baking pan and cook for 45 minutes or until the meat is white and the juices run clear.
