Sugar Free Fat Free Banana Bread

Ingredients
1-3/4 cups unbleached all-purpose flour1/3 cup agave nectar 1 teaspoon baking power1/4 teaspoon baking soda1/4 teaspoon salt1 teaspoon ground cinnamon2 large eggs, lightly beaten1/3 cup unsweetened apple sauce3 ripe bananas, mashed 1 teaspoon vanilla
Directions
Preheat the oven to 350 degree (F).

Grease the 9×5x3 loaf pan with canola oil

Sift flour, salt, baking soda and baking power in a bowl and put aside.

In a separate bowl, mash bananas. Add vanilla, ground cinnamon, agave nectar, apple sauce and eggs and mix them together.

Add the wet ingredients into the dry ingredients. Do not over-mix as it will result in tough bread. Fold the wet ingredients gently into dry just until they mix evenly. Add walnuts and mix gently.

Pour the mixture into the loaf pan.

Bake in the oven for about 45 minutes (in the middle rack), or until a toothpick inserted in the middle comes out clean.
