Simple green mango salad

Ingredients
1 mango - unripe, julienned *use a julienne 'peeler' to make quick work of this!1 red pepper, also julienned * both should be cut into matchstick sized pieces.Juice of 1 lime2 T Rice wine vinegar .25 tsp each grated garlic and ginger1 Tablespoon lite soy sauce1 or more Tbsp fresh coriander leaves, washed and choppeda pinch of dried hot red pepper flakes1T chopped peanuts
Directions
Toss it all together and let stand for 1 hour in the fridge before serving.
Top with chopped peanuts and serve with stir fried tofu or chicken, rice noodles and peanut sauce to roll in lettuce leaves for a complete meal.
