Grilled Corn with Lime Butter

Ingredients
  • 1 1/2 tablespoons butter, melted
  • 1/4 teaspoon grated lime rind
  • 1 1/2 tablespoons fresh lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 8 ears shucked corn
  • cooking spray
Directions
1. Prepare grill or broiler.



2. Combine butter, rind, juice, salt and pepper in a small bowl.



3. Place corn on grill rack or broiler pan coated with cooking spray. Cook 10 minutes, turning frequently. Remove from heat and brush corn with butter mixture.



Makes 8 servings (1 ear of corn with 1 tsp lime butter.)

    The traditional Mexican street vendor version of this is to cook or even overcook the corn in water, then rub it with lime and sprinkle a bit of coarse salt over the whole. No fat at all. The lime butter approach sounds intriguing, and I love the sweetness grilling gives the corn. Nice recipe!!! - 11/28/08

    Here's a technique alteration.
    Instead of drawing butter, mix spreadable corn or canola oil with seasonings. Take a good size dollop of the mixture and peel back the husk (don't remove it). Put the oil mix on the corn and rewrap the corn in it's husk.
    Grill as described in the recipe.

    Great recipe! Note for some: If you put butter/oil on the corn before cooking it tends to result in singed/browned kernals, whether broiling/bbq, husked/unhusked, aluminum foil or not. However, the lime, peppers, etc. can be put on it before cooking w/out the singe. - 2/20/10

    I tweeked this one a bit, but it was amazing! I seasoned the corn, added some spicy chili powder and then wrapped each ear in foil before putting them on the grill. The foil keeps the flavor sealed in the packet and keeps the corn moist. - 4/16/10
