Whole Grain Oat Muffin Bites

Ingredients
1 large egg1 cup whole grain flour1 cup old fashioned oats1/4 cup unsweetened applesauce1 cup soy milk1/2 cup raisins, unpacked1 tsp vanilla extract2 tsp cinnamon1 tsp salt1 tsp baking powderOptional: 1 tsp Stevia extract (for sweetness)
Directions
Preheat oven to 400 degrees C.
Combine dry ingredients, then add wet ingredients and stir until thoroughly mixed. Grease a cookie sheet with oil or cooking spray. Dollop out mixture with a large spoon. Bake for 15-20 minutes, or until muffin bites are firm and golden brown at the edges. Makes 12-14 2-1/2 inch biscuits of moist muffiny goodness!
