3 lbs boneless skinless chicken breast groundJuice from 6 medium limes4 tsp Fish SauceSea Salt to taste2 Tbs sugar1 medium onion finely chopped6 cloves of garlic minced1 Tbs olive oil4 Tbs fresh chopped mint
Heat oil in large cast iron skillet. Saute garlic until fragrant. Add chicken and saute for a few minutes. Add lime juice, fish sauce, sugar and onion. Saute until chicken is thoroughly cooked. Add freshly chopped mint. Salt to taste.
Delicious with rice noodles and rice paper wraps.
