Ingredients
1 Red onion2 Zucchini1 Yellow summer squash1 Yam3 carrots1 Yellow or orange bell pepper1 Red bell pepper1 green bell pepper12 Asparagus (one bundle)mushrooms, fresh (8 oz)2 T. olive oilsalt & pepper to taste
Directions
preheat oven to 400

Cut vegetables into uniform pieces, drizzle with oil (or spray with olive oil spray), season with salt & pepper. Roast uncovered in a large roasting pan, stir after 20 minutes, and roast for another 20-25 minutes.

Makes 10 1-cup servings.
