Chicken Curry

1 Tbsp olive oil2 Tbsp chopped onion4 Cloves garlic minced2 tsp fresh ginger (grated)3 Tbsp curry powder1/2 tsp cinnamon1 tsp cumin16oz skinless chicken breast (diced)1 cup light coconut milk1/2 cup water1/2 cup low-fat plain yogurtjuice of 1/2 lemon
1. Coat a large skillet with oil and place over medium heat.
2. Saute onions until softened, about 2 minutes, then add garlic, ginger, curry, cinnamon, and cumin. Stir to combine. Add chicken and let sear, about 2 minutes.
3. Add coconut milk, water, and yogurt. Stir to coat and let simmer, stirring occasionally, until chicken is cooked through (about 20 minutes). Add lemon juice and stir to combine.
