Shrimp & Spinach Egg White Omelette

3 cups fresh spinach, washed3 egg whites1 tbsp fresh grated Parmesan cheese3 oz raw shrimp, any size1 tsp fresh ground nutmeg1 clove garlic, finely minceddash of salt and pepper
Sautee garlic and shrimp in a nonstick skillet for 3 minutes on medium heat, or just until the shrimp turns opaque. Add spinach and toss just until spinach is wilted, turn heat to low. Add salt, pepper, and nutmeg. Pour in egg whites and cover pan for 5 minutes. Top with parmesan cheese and serve.
