Hanne's Lemon Chicken with Asparagus

Ingredients
3 oz chicken breast, cut into bite size chunks2 Tbsp chopped onion1 cup asparagus spears, trimmed1 tsp canola oil1 Tbsp lemon juice1/2 Tbsp corn starch1/2 cup chicken brothSalt and pepper to taste
Directions
Heat oil in fry pan. Saute onions until soft but not brown. Add chicken and stir fry until opaque. Add asparagus pieces and stir fry for a minute. Add chicken broth. Mix corn starch and lemon juice and add. Cook, stirring, until thickened. Season to taste.

    Chicken, lemon and asparagus are three of my favorite foods. I doubled the lemon and added garlic and basil. I also deleted the corn starch. Top with freshly ground pepper and a sprinkle of grated Parmesan Cheese. Serve with whole wheat pasta. - 3/31/10
