Steamed salmon with rocket, oranges & cucumber salad

3 oranges2 Lebanes cucumbers, trimmed1 bunch rocket, trimmed1 Tbsp sesame oilSalt & pepper to taste800g salmon fillet3 spring onions, thinly sliced diagonally2 garlic cloves, finely shredded3cm fresh ginger, peeled, finely shredded3 tsp soy sauce
Remove skin and white pith from oranges. Cut oranges into segments over a bowl to catch juice. Strain the juice into a jug and place segments in a bowl. Run a vegetable peeler down length of cucumber to form ribbons. Add to orange segments with rocket and toss to combine. Add 2 tsp sesame oil, salt and pepper to reserved orange juice. Whisk until combined. Add dressing to salad just before serving.
Line a large steamer basket with baking apper. Arrange salmon onto baking paper. Combine spring onion, garlic, ginger, remaining sesame oil and soy sacue in a small bowl. Spoon mixture over salmon. Cover steamer basket with a lid and place over a saucepan of simmering water. Steam for 5-8 minutes for medium rare or until cooked to you liking. Serve salmon with salad.
