"Mom's Meatloaf" with ground chicken/turkey, quinoa, and cream of mushroom soup

Ingredients
1lb of ground chicken or turkey1/2C chopped onion1/2C shredded carrot1tsp low sodium Worchestershire sauce1C cooked quinoa1 large egg1 can of Campbell's Healthy Request Cream of Mushroom soup
Directions
Combine, meat, onion, carrot, worchestershire sauce, quinoa, egg, and salt and pepper (to taste) in a bowl, mix well. Spoon into 8 non-stick muffin or mini-loaf pans. Spoon mushroom soup over each and bake 20-25 minutes at 450 degrees.

Eat alone or on a piece of whole wheat bread or whole wheat bagel for some added fiber.

    Wow this recipe was probably one of the best things I have made because I hate cooking. I added a quinoa that was a vegetable seasoning quinoa, thyme and two tbsp of ketchup to add some flavour. It was so good. Will definitely cook this again. - 6/28/19

    I added a tsp of thyme, but otherwise followed the recipe. They are delicious and freeze well. Next time I might even add cranberries for a little sweetness. - 11/18/11
