"Mom's Meatloaf" with ground chicken/turkey, quinoa, and cream of mushroom soup

1lb of ground chicken or turkey1/2C chopped onion1/2C shredded carrot1tsp low sodium Worchestershire sauce1C cooked quinoa1 large egg1 can of Campbell's Healthy Request Cream of Mushroom soup
Combine, meat, onion, carrot, worchestershire sauce, quinoa, egg, and salt and pepper (to taste) in a bowl, mix well. Spoon into 8 non-stick muffin or mini-loaf pans. Spoon mushroom soup over each and bake 20-25 minutes at 450 degrees.
Eat alone or on a piece of whole wheat bread or whole wheat bagel for some added fiber.
