Mock Potatoe Salad

Cauliflower 1 head yields approx 5 cups Hard Boiled Egg .5 c chopped (about 4 large)Celery 1 large stalk choppedPrepared mustard 2 tsp.Onion 1/4 cup (or to taste)Paprika (if desired)
Remove stem from cauliflower and cut florets to bite size. Boil cauliflower to desired doneness. Strain and let cool.
Chop celery , onion and eggs.
Toss 1st 4 ingredients after cauliflower is cooled. Stir in mustard and mayonaise until all ingredients are coated. Salt and pepper to taste.
Refrigerate.
