Thai Noodle & Chicken (using pasta)

Ingredients
8 oz. (uncooked) spaghetti1 Tbsp. sesame oil1 1/2 cups chicken1 medium onion, sliced2 cloves garlic, minced2 Tbsp. smooth peanut butter1/4 cup soy sauce1 cup vegetable broth2 tsp ground fresh ginger1 T. minced garlic1 T fresh lime juice (1/2 lime)1/4 tsp red pepper flakes1 red bell pepper, sliced thin1/4 cup or so fresh cilantro
Directions
Cook spaghetti according to package directions. While it cooks, heat oil in skillet and cut chicken into small pieces. Stir fry chicken in hot oil with onion and garlic until cooked through. Add soy sauce, peanut butter, vegetable broth, ginger, garlic, red pepper flakes and lime juice and simmer until peanut butter is fully incorporated. Toss with hot noodles, mixing well. Add cilantro and red peppers and toss well. Makes 4 servings. Good hot or cold!
