peanut soba noodles (by ounce)

Ingredients
2 oz soba noodles8 oz chic breast 1 packet "taste of thai" peanut sauce mix.5 cup coconut milk + 1.5 cup water (or 1 can light coconut milk)5 clove garlic1 cup mushroom (sliced)1 cup onion (chopped)baby carrots (12 or so)2.5 cup snap peas (cut to bite size)2 cup zucchini (sliced)2 cup broccoli (chopped/bite size)2 green onions (sliced on an angle)
Directions
*cook noodles according to package directions (set aside)

*cut breast into bite size pieces cook chicken (set aside)

*saute garlic and onions(in a wok if you have one) adding the vegetables on med/low heat (slowest to cook first, adding a small amount of water will help them not burn) as veggies warm and soften (I like mine pretty crispy so I don't cook them very long) prepare sauce according to package.

*when all ingredients are ready combine them in wok on med heat and toss till thoroughly mixed and all are warm

*add raw scallion as garnish
