Ingredients
1 can light tuna in water, drained1/2 red bell pepper, diced1/4 red onion, finely chopped1/3 cup giardiniera, chopped2 teaspoons dijon mustard2 tablespoons light mayonnaise
Directions
Put all ingredients in a bowl, stir, and serve over mixed greens or spinach or on whole-wheat bread with spinach. Makes 5 servings.
