Black Bean Chili

1 medium yellow bell pepper, chopped 1/3 medium red onion, chopped2 15-oz cans black beans, rinsed and drained2 cups vegetable broth 1 cup fresh or frozen butternut squash, cubed 1 28-oz can crushed tomatoes3 cloves garlic, minced1 tbsp ground cumin1 tbsp chili powder
Spray large pot with cooking spray and saute bell pepper and onion. Add beans and broth and bring to boil for 5 minutes.
Mix in remaining ingredients and boil for 10 minutes.
Serve with a dollop of sour cream or add a serving of Mexican 2% shredded cheese.
Makes 6 1-cup servings.
