Enchilda Casserole

Ingredients
1 lb ground turkey8 10-inch 96% fat free tortilla shells1 cup frozen corn1 cup chopped green pepper1 cup chopped onion1 cup salsa2 cups enchilada sauce1 package taco seasoning
Directions
preheat oven to 375.

cook turkey in skillet. drain and add onions, peppers, corn, seasoning, salsa, and 1/2 cup enchilada sauce. cook until bubbly.

spread refried beans on the tortillas and set aside

in 13x9 glass pan, put a bit of sauce on bottom to coat, then layer tortilla, meat mixture and a bit of sauce. layer again. usually i can get about three layers. i sometimes have to cut the tortillas to fit. end with a layer of the tortilla if possible. cover with rest of enchilada sauce and then cheese.

bake for 25 minutes. i serve it with fat free sour cream.
