Ginger Fried Rice w/Egg

4 c. cooked white rice2 T. coconut oil2 T. ginger, chopped finely3 cloves garlic, mincedsalt2 c. leeks, cleaned and chopped4 eggs 2 tsp. sesame oil4 tsp. soy sauce
Heat oil in skillet over medium heat. Add garlic and ginger. Fry to lightly browned. Transfer to paper towel and lightly salt.
Reduce heat to medium-low. Add leeks to skillet and cook until tender, but not browned. Lightly salt.
Raise heat to medium and add rice. Heat through. Transfer to serving bowls.
Fry each egg (sunny side up) and place on top of rice mixture in bowl. Drizzle each serving with 1/2 tsp sesame oil and 1 tsp soy sauce. Sprinkle with garlic and ginger.
