Lemon Chicken "chinese take-out" (remake)

Ingredients
3 sprays of Cooking Spray1 Lb. boneless, skinless Chicken Breasts, cut into strips1 sm. red bell pepper, cut into strips1 pkg. (12oz.) Birds Eye Steamfresh Broccoli, carrots, Sugar Snap Peas, Water Chestnuts (thaw and drain)1 pkg. (4-serving size) sugar free Lemon Flavor Gelatin1 Tablespoon Cornstarch2 Tablespoons Kraft Free Zesty Italian Dressing2 cloves garlic, minced1/2 cup Chicken Broth
Directions
Spray a non-stick pan with cooking spray, Heat on medium-high heat. Add Chicken: cook 4 minutes or until cooked through, stirring occxasionally. Add thawed vegtables and red peppers, stir and cook for 2-5 min.until all are hot.

Mix dry gelatin mix and cornstarch in a small bowl. Add broth, dressing, and garlic: stir until gelatin is dissolved. Add to pan Reduce heat to medium cook 3 minutes or until sauce is thickened, stirring frequently.

This makes 4 servings of 1-cup each.

*** If you would like a bit more spice you could add 1/8 teaspoon red pepper powder, or a good pinch of cruched red pepper flakes. This would also be great with some fresh or powder ginger.***

    it was very good, I like the added veggies! But I did add more water to the pan when I added the liquid. The lemon taste was too strong and not enough sauce. - 3/23/10

    I'm interested in trying this recipe, but it mentions broth in the directions but broth is not included in the list of ingredients. - 2/11/10
