Easy Peasy Prawns

500 gram package raw prawns2-3 spring onions (I put 1/3 cup chopped in the calorie counter)3 Tbsp fresh coriander leavesjuice of one lime2 Tbsp butter1 tsp paprika
So easy! Just melt the butter over low heat and add the scallions, cooking for just a few moments until soft. Then toss in the prawns and cook through. Sprinkle in a teaspoon of paprika and squirt the juice of one lime into the pan. Toss the fresh coriander leaves in at the last minute and stir, serving immediately.
You can wrap them up in a tortilla, serve them over rice or salad, or with steamed vegetables. Even my husband loves the tangy, but buttery flavour!
