Texas Sesame Noodle Sauce

1lb. tahina, raw2C water1/2C rice vinegar1/4C brown sugar1.5T Sesame Seeds1.5T Crushed Red Pepper Flakes1.5T Chili pepper3 Scallions2T fresh Cilantro1.5t Morton Lite Salt
1. Take all ingredients except the scallions and cilantro and toss into food processor.
2. Turn on.
3. Hum to the scream of the machine.
4. Keep adding water until it's a thin sauce (2C water worked for me...)
When you're about to serve, add the scallions and cilantro, finely chopped, to the sauce.
Makes 10-1/2C servings. One serving covers about a cup of hot pasta. If you want it cold, mix well while pasta is hot, then cool in fridge.
