Vegan Taco Filling

Ingredients
1 15-oz can black beans, rinsed1 15-0z can diced tomatoes (plain or with green chiles)1 small onion, chopped1 clove garlic, minced2 Tbsp fresh cilantro chopped1 Tbsp olive oilchili powder, cumin, salt, and pepper to taste
Directions
Saute onions in olive oil in a large pan. When translucent, add garlic for a minute. Add black beans and tomatoes an season with chili powder, cumin, salt, and pepper to taste. Cook until juice from tomatoes evaporates. Remove from heat and let cool for a minute. Stir in fresh cilantro.
