Thai red beef curry

Ingredients
1 lbs beef stew meatOne large yellow pepper1.5 cups green beans2 large leekstwo handfuls of small carrotsfresh spinach, 5 cups or one containertwo cans coconut milkone can bamboo shootsone large can water chestnutsShitake mushrooms rehydrated, 1 cupCurry paste, Taste of Thai, added to taste
Directions
brown stew meat, chop the vegetables (pepper, leeks, carrots, mushrooms), and add to the meat, cooking until desired tenderness. Add the coconut milk, simmer until meat is tender, add the bamboo shoots and water chestnuts. Simmer another 10 minutes. makes 6 servings. Is good the next day for lunch too. Serve over rice or with injera.
