Roasted Eggplant

Ingredients
1 small eggplant1 tbsp olive oil1 tbsp pepperdash salt
Directions
Preheat oven to 450 degrees

Slice eggplant into thin slices. Brush oil on pan. Place strips on pan and sprinkle salt and pepper evenly. Bake for about 20 minutes.

Makes 4 servings as a side dish.
