1.5 pounds fresh or thawed frozen shrimp, peeled, deveined, tail off3 Tbsp trans-fat free margarine4 garlic cloves, pressed, minced or grated1/4 cup fresh lemon juice3 Tbsp red pepper flakesSalt and pepper to taste
Rinse shrimp under cold water and pat dry well with a paper towel. Season with salt and pepper.
Heat margarine and garlic in a large skillet over medium heat until melted and bubbling, 1-2 minutes. Add shrimp and stir to coat with margarine mixture.
Add lemon juice, parsley, and red pepper flaks; cook, stirring occasionally, until shrimp are pink, about 2 minutes. Do not overcook or the shrimp will be tough. Remove from heat, season with salt and pepper, and serve hot.
