Amber's Stuffed Flounder

Ingredients
8 Southern Home Arrowtooth Flounder Fillets (approx. 4 oz. ea.)1 pack Schooner Imitation Crab Meat, chopped3/4 cup whole wheat bread crumbs1 medium onion, chopped1 medium carrot, shredded1 medium celery stalk, chopped1 cup fresh spinach, chopped1/3 cup fat free skim milk1.5 tbs. extra virgin olive oil1.5 tsp. Old Bay Seasoning or to taste
Directions
Preheat oven to 350 degrees.

Pour olive oil into skillet, add onion and celery. Saute on medium heat until tender. Add carrots, spinach, and crab meat. Sprinkle in Old Bay Seasoning. Add breadcrumbs and skim milk. Stir until the mixture is combined and sticks together (like stuffing).

Line baking pan with foil and spray lightly with cooking spray.

Place even piles of stuffing on each fillet. Bake for 20-30 min. or until fish is cooked through (it should start flaking).

    We loved the stuffing, but the fish itself was pretty bland. It may have benefited from the paprika that I see one of the reviewers used, and it might have also been better if the fish was over the stuffing and broiled for a minute at the end. - 1/26/12
