Directions
1 tblsp each: soy sauce, rice vinegar, lemon juice, sesame oil, 4 oz udon noodles, 4 oz cooked chicken breast, 2 scallions sliced, 1 cucumber, 1 cup coleslaw.
Mix first 4 ingredients in a bowl. Cook noodles as per packae instructions (drain and rinse in cold water to avoid sticking). IN large bowl, combine noodles, sauce, chicken, cucumber and slaw and sauce. serve
