Non-dairy Pesto

Ingredients
2 cups basil leaves chopped1 cup parsley leaves chopped1/2 cup whole almonds1/4 cup olive oil 2 tsp balsamic vinegar1/4 cup nutritional yeast, or other cheese substitute1/4 tsp salt, more or less to taste
Directions
In food processor or blender, coarsely grind the almonds. Add basil and parsley and mix. Add olive oil, nutritional yeast, balsamic vinegar, and salt. Mix until very smooth.

Makes four servings. Tastes great on pasta, bread, pizza and veggies.
