Flax Sandwich Buns (Gluten Free, Low Carb, Grain Free)

1/2 cup plus 1 tablespoon flax meal 1 1/2 teaspoons onion powder (opt)1 tsp caraway seeds (opt)1/2 tsp salt3/4 teaspoon baking powder drop or 2 of stevia3 eggs 1 1/2 tablespoons water 1 1/2 tablespoons olive oil
Mix the dry ingredients; add eggs, water and oil. Pour the batter into 6 greased muffin top pans. Bake at 325º 15-20 minutes. To serve, split the buns horizontally to make two halves using a long, thin knife.

This is SO GOOD! Especially with the onion powder and caraway seeds. I have re-posted this sodium-free so I could get accurate daily numbers. It's the same name with Salt Free added at the end. I have to admit that I was skeptical about the way the buns would turn out, and I am delighted to have been wrong. These look very thin, but you can easily slice them into two pieces. They are delicious and hold together really well. My carb loving husband loves them as much as I do. - 8/9/13

Tasty, quick and easy. I baked them in a waffle weave pan that is supposed to be for making cookies for ice cream sandwiches. It made 12 perfect little pieces, enough for 6 sandwiches without needing to slice!
I cut the salt to 1/4 teaspoon based on other comments and will cut to 1/8 next time. - 9/3/12

Super!Ate this with curry chicken salad and veggie kale soup.So glad I found this recipe. Didn't have much onion powder, so I added lo sodium Spike as well as some Italian herbs. I like lots of flavor.Were easy to cut after baking and cooled.Plan to freeze them individually and toast as needed.Yum! - 10/22/13
