Ingredients
2 cp whole wheat flour1/2 cp splenda3 tsp baking powder1/2 tsp salt1 cp frozen or fresh blueberries1 egg, beaten3/4 cp skim milk1/3 cp unsweetend applesauce
Directions
preheat oven to 400, grease muffins tins with cooking spray, or paper line.
mix splenda, flour and baking powder tog, add in blueberries mix gently.
In small bowl ,beat egg, add in milk and applesauce, mix tog.
add to dry ing. bake for 18 to 22 minutes.
makes 12 muffins

    The concept is good...texture very bad. Because of the lack of flour, these muffins were spongy at best and collapsed once taken out of the oven. I am looking for a low cal breakfast treat but these don't fit the bill. - 3/6/08

    I thought they were great alternative to the extremly fattening versions you get from the grocery stores or cafes. If you have more of a sweet tooth, try adding cinnamon or vanilla to the recipe to give it a little more flavor. Overall very good recipe and easy to make. - 8/13/07
