Applesauce Muffins with Oat/cinnamon topping

Ingredients
TOPPING2/3 cup old fashioned oats1/4 cup brown sugar, packed1 tsp cinnamon2 tbsp smart balance - MeltedBATTER1 1/2 cups all purpose flour1 cup old fashioned oats1 tsp baking powder1/2 tsp baking soda1/2 tsp cinnamon1 cup unsweetened applesauce1/2 cup skim milk1/2 cup butternut squash puree1/2 cup brown sugar, packed1/4 cup vegetable oil1 large egg
Directions
1 Preheat Oven to 400. Coat muffin tins with cooking spray or line with baking cups.

2. For topping, stir together the oats, sugar, and cinnamon in a bowl. stir in the margarine

3. For Batter, combine the flour, oats, baking powder, baking soda, and cinnamon in a large mixing bowl and stir. In a second bowl, mix the applesauce with the milk, butternut squash puree, sugar, oil and egg. Add the flour mixture slowly, stirring until just moistened. Do not overmix, the batter is supposed to be lumpy.

4. Divide the batter evenly amont hte muffin cups and sprinkle with the streusel topping. Bake until the topping is lightly browned and a toothpick comes out clean when inserted into the center of the muffins, 18-20 minutes. Turn the muffins onto a rack to cool.
