Azuki Ice Cream

Ingredients
150g azuki beans (red beans)4 cups water1 cup low fat milk4 tbsp non fat milk powder5 tbsp sugarPandan leaves
Directions
Soak red beans for a about 6 hours in water
Whisk milk powder in milk, place in freezer for 3-4 hours
Boil beans for 2 hours until it expands and water reduces
Add pandan leaves at the last 10 minutes
Add sugar
Let cool
Blend with semi frozen milk mixture and return to freezer overnight

Makes about 8 large scoops
