Eggs-n-Oats

Ingredients
Directions
1 whole egg 2 egg whites1/2 c. rolled oats (Quaker Oats)2 oz skim milk (just more than a splash)
Add all ingredients to bowl, mix well.
Spray non-stick spray (Pam, for example) in a skillet or frying pan.
Add all ingredients; scramble as you would with ordinary eggs.
When eggs-n-oats reach desired texture (just like scrambled eggs--wet, dry, somewhere in between), remove from heat, plate.
There are lots of options for seasoning, which I'm sure people will add to below. I prefer some combination of cayenne, hot sauce, and a moroccan spice blend I have at home. Some people make it sweet with honey, berries, bananas, cinnamon, splenda, agave nevtar, truvia, etc. Everyone feel free to add your preferred eggs-n-oats prep below!

My husband and I were really skeptical about this recipe. I used quick cooking since I didnt have rolled on hand, they soaked up the eggs quicker so it was really like a pancake. Added cheese and hot sauce with a side of bacon and my hubby made the Homer Simpson noise. They were perfect!! - 10/24/10

I loved this! I actually used 1/4c. of oats, and added an 1/8 c. of lowfat cottage cheese and ate it with unsweetened applesauce- sort of blintzy, or latke-like. Really a nice Sunday morning breakfast treat! Thanks! Oh- and I cooked it like a big pancake, flipping it halfway through- mmmm. - 6/6/10

When I first saw this I thought 'there is no way I will make this unless it has good reviews'! This was good. I sauteed spinach, green chilis, and diced tomato with tabasco and pepper and added to the mix. I used egg whites to keep out the fat since I am out of pan spray and had to add a bit of oil - 4/26/11

These are so good! They smelled almost vanilla-y when they were cooking. I just added a touch of honey & cinnamon. Not too sweet, perfect for breakfast! I would even make these for dinner with some fruit or veggies. This will definitely be a breakfast staple! Great protein to start the day. - 9/4/10

When Rachel_Mac first posted this, I was skeptical. I ending up falling it love with the recipe after tweaking it to my liking! Loved this but next time will make 1/2 recipe. Instead of milk I added 2 tbsp of yogurt ranch chipotle dressing (Walmart) 25 cal. and sauteed zucchini, red onion and baby bella mushrooms to put in or on top, and a little salsa and greek yogurt and cilantro! This would make a great lunch or dinner! - 3/3/13

Amazing!!! I was a little skeptical but after reading the great reviews I thought I would try it. I had it this morning and absolutley loved it. I wasn't sure what to put on it so I decided to go with the hot sauce. I used Franks Hot sauce on top of it and it turned out wonderful. - 10/25/10
