Ingredients
Garlic, 5 cloves more to tasteYellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) Cod (fish), 16 oz (may use more for leftovers)Curry powder, 4 tbsp (our family likes lots of curry flavor)Onions, raw, 1 medium (2-1/2" dia)Red Potato, 450 grams (1 or 2 for each serving)Spinach, fresh, 255 gramsCoconut Milk, 1.5 cup (one can)Lemons, thinly sliced with rindGinger, ground, 1 tbspPepper, red or cayenne, 1 tspBasil, 1 tbsp (fresh would be better)
Directions
Preheat oven to 400 degrees. Line large baking dish with tin foil. Place fish fillets on bottom. Pour coconut milk over fish. Add curry powder, basil, ginger, roll fish in mixture to coat. Layer fish with garlic, onion and peppers (all sliced). You may add small red potatoes or cook potatoes separately. When fish is almost cooked through, add spinach so it can steam just until slightly wilted (or your preference for doneness).

To serve place fish on plate, dish onion mixture over fish or to to side with spinach. Add potatoes and spoon coconut milk over all.
