Healthy Monster Muffins

3/4 c all-purpose flour3/4 c whole wheat flour1/2 c brown sugar3/4 c quick cooking oats1 tsp baking powder1 tsp baking soda1/4 tsp salt1 c fresh blueberries1/2 chopped pecans1 very ripe banana, mashed1 cup soymilk1 T lemon juice1 egg1 T vegetable oil1 1/2 tsp vanilla extract
1. Preheat oven to 350 degrees. Grease 6 cup (big ones) muffin pan.
2. In large bowl stir together dry ingredients. Gently stir in blueberries and pecans. In a seperate bowl, combine remaining ingredients. Pour wet ingredients into dry and mix just until blended. Will be lumpy. Spoon into muffin cups all the way to the top.
3. Bake 20 minutes in the preheated oven (16 minutes for regular muffins), or until the tops of the muffins spring back when lightly touched.
Makes 6 big muffins or 12 regular sized muffins.
