Raw Corn & Avocado Salad

Ingredients
3 Medium sized Ears of Sweet Corn (slice corn kernel off)2 Jalapeno's (diced-small)1/2 of Red Bell Pepper (diced-small)1 large sized Avocado (diced-small)3 Basil Leaves juice of 2 limesPepper to tasteSalt to taste
Directions
This is very easy to make all you have to do is Chop the Avocado, Red Bell Pepper and Jalapeno into small pieces and thinly slice the fresh leaves of Basil and place in large bowl.

Then Squeeze the 2 limes of juice into the mix and add pepper and Kosher Salt to taste.

You can add Red Onions instead of Red Bell Peppers or Chop some Cucumbers into it if you'd like.

The salad tastes better if left over night but you can eat immediately.

You can eat over a salad as I did and drizzle lemon over the salad no need for dressing the avocado and the lime adds this creamy texture that is delicious in itself. You can eat with chips or on crackers.

Also you can add a type of nut: like Walnuts or Almonds I added Raw Pumpkin Seeds.

    Love raw corn :) This will be even better when farmers markets come back, and I can get FRESH corn! It's so much sweeter when fresh!

    I upped the corn just because I love it :) And lessened the jalapeno for my first try to make sure it wasn't too hot. But it worked out well! - 2/4/11

    That's great I'm glad you liked it. I shared it with a friend who is not raw and she fell in love with it. she didn't have bell peppers so she used cucumber. I tried it and I didn't like it to much it was too watery for me.
