3 cans (6 oz. each), tuna in olive oil, drained and flaked1 large egg, lightly beaten½ c. fresh cilantro, coarsely chopped⅓ c. plain, dry, breadcrumbs2 Tbsp light mayonnaise1 Tbsp fresh lemon juice1 Tbsp olive oil
Stir together tuna, egg, cilantro, breadcrumbs, mayonnaise, and lemon juice. Mix until ingredients just hold together. Shape into eight cakes. In a large skillet, heat oil to medium. Cook cakes until golden brown and crisp on the outside. Serve hot.
