Ingredients
1 karge Egg, fresh1/4 cup Egg substitute, liquid1 cup Light Soy milk1 TB Splenda (or VERY small amount of Stevia)1/2 tsp. Cinnamon,1/8 tsp ground Nutmeg1 tsp Vanilla Extract8 slices Sara Lee, Delightful Wheat Bread,
Directions
Blend all ingredients except bread in blender.
Dip slices of bread in mixture and brown on pre-heated griddle until light golden brown(About 3-5 minutes). Serve with sugar free jam or preserves, syrup, fresh berries or berry compote.
Makes 4 servings, 2 slices each

    I made this for a light Sunday evening dinner. My family enjoyed it and said it didn't taste low cal. I made it with skim milk instead of soy and sugar in place of the Splenda. The sugar didn't dissolve in the egg mixture so next time I'll use honey. Great for French toast cravings! Thanks. : - 3/17/08
