3 medium Egg, fresh, whole, raw 2 1tsp Olive Oil 170 Mixed Vegetables, frozen 240 Tofu, firm 1 oz White Bread 15 serving Peppers, red, canned (piquillo) serv 1 pimiento
Saute the vegetables.
Mash the tofu
Whisk the eggs.
Mix all the ingredients and add the spices to taste.
Mix again
If you have time, you can prepare the mix a few hours in advance so that the tofu and veggies can take all the flavour from th spices.
Fill the peppers with the stuffing and cook/roast them
