Chez's Prawn Curry

Ingredients
300g potato cubed2 cups egglants cubed or sliced1 cup onions diced400g canned crushed tomatoes4 tsp (20g) crushed garlic20g crushed ginger (quartered lengthwise)2 chilli peppers120 (1kg) raw shrimp/prawns deveined3 tbspn (20g) curry powder2 tbsn Vegetable Oil2 cups water
Directions
Heat oil and then fry curry powder until aromatic
saute onions, garlic and ginger
add tomatoes and simmer on low heat,
add chilli, potatoes and eggplant
cover with water and simmer until potatoes are cooked
add shrimps until pink and tender
serve on rice
