Introduction

Quasi Indian sauce with Fish Quasi Indian sauce with Fish

Ingredients

    4 cod filet
    1/2 tsp Cayanne Pepper
    2 Tbs Curry Powder
    3 Tbs Ground Ginger
    3 Cloves Garlic
    2 cups Fresh Apricots diced
    2 Medium onions, finely sliced
    11/2 tsp cumin seed, ground
    12 oz Fire roasted Tomatoes
    1 Tbs Brown Sugar
    2 Tbs Dry Vermouth

Directions

Serves 4
Prep time does not include a marinade time of 2 - 3 hours.

Thaw cod and put into a shallow pan.
Add chile powder, curry powder, ginger and garlic, gently turn repeatedly to cover fish completely. Cover and refrigerate 2-3 hours to allow fish to absorb flavours.
Heat oil in a large heavy saucepan. Add onions to pan and cook, stirring about 5 minutes, until soft. Add cumin, cook 1 minute more. Add tomatoes and cover and cook over low heat 20 minutes.
In a seperate skillet over medium hi heat, rubbed with some oil, sear the seasoned cod filets just enough to brown the outside. Add to tomato/onion cumin mix.
Add (drained) apricots, add salt, sugar and white wine. Simmer, covered at least 10 minutes, until tender. Serve hot.

This works well with chicken as well. the difference is in cooking times

    This was wonderful. Just enough spice to give it some personality, but not overpowering. I have to admit I was hesitant about eating apricot, tomatoes, and curry powder in the same spoon, but was very pleasantly surprised! - 6/4/10
