Liz's Chicken Salad

Ingredients
10.6 oz Chicken Breast chopped8 tbsp Hellmans Light MayoCelery 100 grams chopped 1/2 tbsp pickle relish2 tsp French's Classic Yellow MustardGreen Olives aprox 20 choppedPepperParsley
Directions
Chop chicken, celery, olives as finely as you would prefer. The smaller they are, the easier they stay on the bread. Add, Mayo, relish, mustard and mix. Taste a small piece and add black pepper and parsley to taste. A small pinch of dried parsley is fine. Makes 4 - 5 oz servings

Feel free to add chopped apple, pecans, dried cranberries or chopped hard boiled egg. This will affect the calorie count but you can divide it into smaller servings. This makes a fair amount. Good for several lunches. Serve on bread, with crackers, or on a raw spinach salad. (Not included in calorie count)
