  • Number of Servings: 11
Ingredients
1/2 tsp vanilla extract 1 T Splenda 1/4 cup plus 1 Tbsp fat-free cream cheese 1 Tbsp unsweetened cocoa powder 1 cup light whipped topping 1 Tbsp mini chocolate chips
Directions
Mix the whipped topping, cream cheese, vanilla, and Splenda (using mixer, blender, or bowl and fork).

For chocolate cheesecake bites, add the cocoa powder and stir thoroughly.

To create swirl cheesecakes, add the cocoa to half the batter. Mix thoroughly, then recombine the batter, swirling the chocolate batter into plain batter.

Spoon into an ice cube tray.

Top each bite with 5-10 mini chocolate chips, one teaspoon sugar-free chocolate syrup, or sugar-free fruit preserves. (Calories not included.)

Freeze for 2 hrs. After fully freezing, they should pop right out, or you might need to run water over the bottom of the tray to help them come out.

Yummy. I've made it 3 times...the last two i just put the mixture in a glass pie plate and froze it like a cake because it was just TOO much of a pain to get the little ice cubes out. My hubby and I just split it in half and it's still only like 105 calories! (pre choc chips) - 9/28/07

Very yummy - however, I tripled the recipe and put it in muffin tins - so it makes 16 little muffin thingies that way. - 8/11/07

I used a mini muffin pan and paper liners like other users suggested and they came out great. Thanks for the recipe! - 2/28/10

SOOO yummy!!!!!!!!!!!! The little chocolate chips are the BEST with it! You have to be careful, or after you make them you lick the bowl and spoon! The fiance even said they just "burst" with flavor! Wait until they thaw a little so they are nice and creamy! :) Thank you! - 8/10/09

The taste was incredible! however, freezing them in an ice cube tray didn't seem very easy to me - they didn't come out easily. Once they were out, I put them in the fridge. After they thawed the consistency was too soft to be a "bite" - it had to be eaten with a spoon. - 12/19/07

Didn't have a strong cheesecake taste, but since mine turned out to have 20 calories, can't complain! - 12/11/07

I love cheescake and these give me just enough of a taste without feeling guily for indulging my pleasure. I left out the cocoa and use 1Tbsp Weight Watchers Raspberry jam. totally yummy - 5/10/10

So simple and easy to make. I had to double the recipe to fill 14 ice cube trays though. Had no trouble getting them out. The ladies I served them to loved them as well! Thanks! - 10/10/09
