Ingredients
1/2 cup Quinoa, uncooked1 cup Cucumber, diced1/2 cup Red Pepper, diced1/2 cup Red Onion, diced1 Avocado, diced1 cup Spinach, chopped1/2 cup Parsley, chopped6 oz. Medium or Firm Tofu, crumbled1/4 cup Feta, crumbled1 tsp Canola Oil1/4 cup Lemon Juice1/4 Rice Vinegarpepper and/or red pepper flakes to taste
Directions
Cook quinoa in one cup of water.

Mix quinoa and all remaining ingredients in a large bowl.

Makes five 1-cup servings
