Deep Dish Pizza

Ingredients
3/4 c. whole wheat flour1 t. baking powder3T. diet margarine2 eggs2/3 c. low fat cottage cheese1/2 c. pizza sauce1 medium onion chopped1/2 c. green pepper chopped1/2 c. mushrooms sliced4 oz. part-skim mozarella cheese shredded1 T. Parmesan cheese
Directions
Mix together: 3/4c whole wheat flour and 1 t. baking powder. Add 3T. diet margarine and cut in until mixture resembles coarse bread crumbs.
Beat 2 eggs and 2/3c. low-fat cottage cheese. Stir into dry ingredients.
Pour into a 10" pie plate sprayed with Pam.

Cover mixture in pan with 1/2c. pizza sauce leaving 1/2" border around the edge. Cover sauce with 1 medium onion, 1/2c. green pepper chopped, 1/2c. mushrooms, then add 4oz. shredded part-skim mozarella cheese and 1 T. Parmesan cheese on top.

Bake 20 minutes at 375 degrees. Cool 5 minutes before cutting. Makes 2 generous servings.
