Italian Sauce (Lower Sodium)

1 Tbsp Extra Virgian Olive Oil7 Cloves of Garic (minced)3/4 Cup Swanson Fat Free Low Sodium Beef Broth2 - 6oz Cans of Tomato Paste3 - 29 oz Cans Tomato Puree (my favs are ShopRite or Progresso)7 Cups water3/4 cups grated Parmigiano Reggiano Cheese1/4 cup Dried Parsley1 Tbsp Onion Powder1 Tsp Ground Black Pepper1 Tbsp Sugar
In a large stock pot, heat olive oil. Add minced garlic, stir until light golden brown. Remove from heat!
Add to pot: Broth, Puree, Paste, Cheese & Water. Wisk together. Add Parsley, Onion powder, Pepper & Sugar. (The sugar help nutrilize some of the acid to help prevent indigestion.)
Optional: put in browned italian sausage links &/or meatballs (see my Italian Meatballs (Lower Sodium)). You can also add a ham bone for a more flavorful sauce.
Bring to a boil and reduce to a very low simmer (lowest heat possible). Simmer for 4 hours. You can put a lid on but be sure it is tilted to let the excess water escape. Be sure to stir reguarly.
