zuccini spinach paella

Ingredients
1 tsp.olive oil 1 small onion1 zucciniand continue with sautesmall zucinni or one cup sliced into cubesone half roma tomato, cubedone half cup baby spinach5 black olives thin slicedone tablespoon Italian herb blend3 ounces lite mozzarella cheese
Directions
saute onions in olive oil and add zuccinitill lightly cooked and stir in black olives and Italian herbs. Add tomato and spinach and stir till slightly wilted . sprinkle on grated mozzarella and cover pan with glass lid till melted and serve.

    This was great! I added and substituted what I had on hand. I added yellow squash and some leftover edamame. Then I had to sub capers for olives because unbeknownst to me, my husband had gobbled up the black olives I had set aside! It worked out great. He ate them up! - 9/11/13
