Ingredients
6 medium red potatoes (4" diameter) 1/2 c. red peppers finely chopped1/2 c. onion finely chopped1/2 c. celery finely chopped2 tbsp. dillcracked black pepper1/2 c. olive oil1 tbsp. dijon mustard1 tbsp light mayo1 tbsp balsamic vinegarcracked black pepper
Directions
cook potatoes and cut into bite size pieces. Toss with peppers, onion, celery, dill and cracked pepper. Skake together olive oil, mustard, mayo and vinager. Stir into potato mixture and add cracked pepper and salt to taste.

    FANTASTIC, but made a few changes. 1/4 cup shallots instead of onions, roasted the pepper, 1/2 the oil, and added fresh green beans (cook with potatoes towards the end). delish! OH-- and i omitted the dill. - 3/20/08
