Kelly's Chicken Nuggets with Veggies and Mashed pOtatOes!

Ingredients
* 4 slices Bread, 7-grain * 2c Kellogg's Raisin Bran Cereal (minus the raisins) * 3tsp Paprika, 3 tsp, ground * 3tsp Pepper, black, ground * 3tsp Basil, ground * 3tsp Oregano, ground * 3 Chicken Breast, bone and skin removed * 1 1/2c Extra Virgin Olive Oil, 24 tbsp * 2tsp Hot Sauce, * 15 Green Beans * 8 Brussels sprouts, fresh, cut in half to make 16 * 5 Carrots, raw * 6 Potato, raw * 1/4c Butter, salted * 1/4c Milk, 2%
Directions
Bread Crumb and Bran:
Toast bread. Combine bread and bran into food processor. Add 1tsp of each, paprika, pepper, basil and oregano. Mix well together for 5 mins.

Veggies:
Clean, and cut string beans and brussel sprouts. Coat them in 1/2c of EVOO mixed with 1tsp of each, paprika, pepper, basil and oregano. When well coated, coat well with bread and bran mixture. Clean and cut carrots. Sprinkle a little EVOO on a non stick tray. Put all veggies on tray.

Chicken Nuggets:
Clean and trim fat off of breasts. Coat with 1c of EVOO mixed with hot sauce and 1tsp of each paprika, pepper, basil and oregano. After well coated. Coat with the rest of the bread and bran mixture. Refrigerate for at least an hour to allow bread and bran mixture to to stick very well to raw chicken. When ready to cook, sprinkle EVOO on a non stick tray. (not the same tray as the veggies, use a different tray)

Cook Veggies in oven on 350F for 15-25 mins or until soft.

Cook Chicken in oven on 350F for 30mins.

Mashed Potatoes:
Clean, peel and cut potatoes into small squares. Put into a pot of water. Bring to boil. Boil Potatoes until soft. Drain. Mash with a mixer. Add 1/2 c butter, mix well. Add 1/4c milk. Mix together until potatoes are smooth and fluffy!
